The Northern part of the country is known for its wonders in food production. From here comes various delicacies. One notable delicacy from the North is the Beef Jerky popularly known as Kilishi or Kilichi.
The kilishi is the spicy Nigerian Beef Jerky, another gift from the North. It is one of those Nigerian snacks that you can eat till your chin hurts but yet you will not want to stop….lol. Kilishi can be likened to Nigerian Suya in that they have similar ingredients but the preparation and texture is different.
Of course we know it’s majorly prepared by its owners, the, northerners, but it’s equally possible to prepare yours at the comfort of your hoMe. Yes! Very possible. Traditionally, Kilishi is dried under the sun’s intense heat for about three days but I guess we are here to know how best to prepare it in our kitchens in just an hour.
Here are the various ingredients used to prepare kilishi;
- Pieces wafer-thin beef
- Suya spice (suya pepper)
- Cloves of garlic
- Cloves (Kanafuru)
- Stock cube
- Dry cayenne pepper seeds

Bear in mind that the Kilishi will become drier when it has cooled down completely, in case you are deciding the time to bring it out of the oven.
