One of the places where creativity rears it’s head often is in the kitchen, that addition of crayfish in a brooth can make the difference and so on. New recipe’s are literally created and share everyday, It’s a beautiful world in the food industry.

One of our favourite Nigerian food blogger is Bukky. One thing about her is her love for recipe’s with a distinctive appearance and of cause taste, her Jollof rice isn’t typical she loves that extra touch and that’s the reason we love her;

Hi Guys, here’s an updated recipe for my coconut fried rice. It’s rich and delicious as usual. I use coconut powder because it deepens the coconut flavour without using a lot of coconut milk (which can cause the rice to be soggy or mushy). Try out this version and let me know what you think. Cook Time: 30 Minutes

Total Time: 45 Minutes

Serves: 4


2 Cups of Rice
1/4 Cup Canola Oil
3 Tbsp Coconut Powder
1/2 Cup Green Peas
1/2 Cup Green Beans
1/2 Cup Sweetcorn
1 Medium Red & Green Pepper
2 Medium Carrot
1/2 Tsp Dried Thyme
1 Tsp Garlic Powder
1/2 Tsp Curry Powder
1 Tsp Salt
3 Stock Cubes
